- 4 skinless, boneless chicken thighs, halved
Pasta
- 300g fettuccine or tagliatelle
Sauce
- 1 tbsp butter
- 200ml double cream
- ½ whole nutmeg, grated
- 100g parmesan, divided

Instructions
- Cook Chicken: Heat the olive oil in a non-stick frying pan over medium-high heat. Add the halved chicken thighs and cook for about 10 minutes, turning halfway through, until they are golden brown and fully cooked.
- Shred Chicken: Remove the chicken from the pan and let it cool slightly. Using two forks, shred the chicken into bite-sized pieces.
- Boil Pasta: Bring a large pan of salted water to a boil. Add the fettuccine or tagliatelle and cook for 1 minute less than the package instructions indicate for al dente texture.
- Prepare Sauce: While the pasta cooks, melt the butter in the frying pan over medium heat. Scrape the bottom of the pan to lift any browned bits for flavor. Pour in the double cream and add the grated nutmeg, then bring the sauce to a gentle simmer. Return the shredded chicken to the pan and combine well.
- Toss Pasta and Sauce: Using tongs, transfer the drained pasta directly from the cooking water into the frying pan with the sauce and chicken. Sprinkle most of the parmesan cheese over the pasta and toss thoroughly to coat, adding a splash of pasta cooking water if the sauce seems stiff.
- Serve: Season the pasta with salt and black pepper to taste. Divide the creamy chicken Alfredo among bowls. Top with the remaining parmesan cheese, chopped parsley, and freshly ground black pepper before serving.
