Featuring fresh, finely chopped vegetables, crispy bacon, sharp cheddar cheese, and your choice of two luscious dressings—a classic Ranch or a honey lemon version—this salad balances creaminess and crunch in every bite. It’s easy to prepare, served chilled, and yields 8 satisfying portions.

Ingredients

Salad Ingredients

  • 3 cups broccoli florets, finely chopped into small pieces
  • 3 cups cauliflower florets, finely chopped into small pieces
  • 2 cups carrots, finely sliced
  • 15 oz sweet corn, canned and drained
  • 1/2 cup red onion, diced
  • 10 slices bacon, cooked, drained of fat, and chopped
  • 1 cup sharp cheddar cheese, shredded

Salad Dressing Option 1 (Ranch Dressing)

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream or kefir or Greek yogurt
  • 2 tablespoons dry Ranch mix (or more, to taste)

Salad Dressing Option 2 (Honey Lemon Dressing)

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream or kefir or Greek yogurt
  • 2 tablespoons lemon juice
  • 1/4 cup honey, softened or warmed
  • 1/4 teaspoon salt

Instructions

  1. Prepare Salad Ingredients: Finely chop broccoli and cauliflower florets into small pieces. Thinly slice the carrots. Dice the red onion. Cook and chop the bacon into small pieces. Drain the canned sweet corn thoroughly. Shred the sharp cheddar cheese.
  2. Combine Salad Base: In a large bowl, place the chopped broccoli, cauliflower, carrots, drained corn, diced red onion, chopped bacon, and shredded cheddar cheese. Toss gently to mix all the salad ingredients evenly.
  3. Choose Your Dressing: Decide whether you want to use Ranch dressing (option 1) or the honey lemon dressing (option 2) based on your flavor preference.
  4. Make Ranch Dressing: In a medium bowl, whisk together 1/2 cup mayonnaise and 1/2 cup sour cream (or kefir or Greek yogurt). Add 1 or 2 tablespoons of dry Ranch mix, stir well, and taste. Add more Ranch mix if desired to achieve preferred flavor intensity.
  5. Make Honey Lemon Dressing: In a small bowl, combine 1/2 cup mayonnaise, 1/2 cup sour cream (or kefir or Greek yogurt), 2 tablespoons lemon juice, 1/4 cup honey (softened or warmed as necessary for easy mixing), and 1/4 teaspoon salt. Whisk the mixture thoroughly until smooth and well blended.
  6. Mix Salad and Dressing: Gradually pour your chosen dressing over the large bowl of salad ingredients. Gently stir everything until all components are evenly coated with the dressing.
  7. Chill and Serve: For best flavor, refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together. Serve chilled as a delicious side dish.

Notes

  • For a lighter option, replace mayonnaise with Greek yogurt and use low-fat sour cream.
  • You can substitute kefir for sour cream in either dressing for a tangier flavor.
  • If you prefer vegetarian, omit the bacon or use a plant-based bacon alternative.
  • Adjust the amount of dry Ranch seasoning or honey to suit your taste preferences.
  • Chilling the salad for a few hours enhances the flavor and texture.
  • This salad keeps well in the refrigerator for up to 3 days.
