Ingredients
Beef
- 1 ½ – 2 pounds beef (thinly sliced, sirloin, chuck, round, or similar cut)
- 1 teaspoon salt
- 1 teaspoon pepper
Sauce and Vegetables
- 2 tablespoons Worcestershire sauce
- ¼ cup butter (divided)
- 2 cups beef broth
- 2 tablespoons flour or cornstarch
- 1 medium onion, chopped
- 2 tablespoons garlic, minced
- 2 cups fresh mushrooms, sliced
- 1 tablespoon dried thyme
- 1 teaspoon dried mustard
- 1 tablespoon paprika
- 1 teaspoon salt
- 1 teaspoon pepper
Finishing
- 1 cup sour cream
Instructions
- Season the beef: Generously season the thinly sliced beef with salt and pepper. Use cuts like sirloin, chuck, or round depending on availability.
- Melt butter: Place 2-3 tablespoons of butter in a large non-stick frying pan over medium to medium-high heat and allow it to melt and become slightly sizzling.
- Sear the beef: Add the seasoned beef slices to the hot butter and sear until nicely browned on all sides. Remove and transfer to a plate. Optionally cover loosely with foil to keep warm.
- Sauté onions, garlic, and mushrooms: Add the remaining butter to the pan. Add the chopped onions and cook until they start to soften. Then add minced garlic, stirring briefly to combine. Add the sliced mushrooms and continue cooking until they are tender, about 10 minutes.
- Combine beef and seasonings: Return the seared beef to the pan. Pour in the beef broth and Worcestershire sauce. Add dried thyme, dried mustard, paprika, salt, and pepper. Bring the mixture to a boil, then reduce heat to a simmer.
- Thicken the sauce: Sprinkle the flour or cornstarch evenly over the beef mixture and stir well to combine. Alternatively, mix the flour or cornstarch with a scoop of sauce separately before adding back to the pan for smoothness.
- Adjust flavors: Taste the sauce and add optional tomato paste, red wine, or crushed red pepper flakes if desired. Adjust salt and pepper according to preference.
- Simmer: Let the stroganoff simmer gently on low heat for about 30 minutes, stirring occasionally, until the sauce thickens nicely.
- Prepare the side: While the sauce thickens, cook egg noodles, rice, potatoes, or your choice of pasta according to package instructions.
- Finish and serve: Remove the stroganoff from heat and stir in the sour cream just before serving. Spoon the creamy beef and mushroom mixture over the cooked noodles, rice, or potatoes. Enjoy immediately.
Notes
- For best texture, slice beef thinly and sear quickly to avoid overcooking.
- If using cornstarch, mix it with a little cold water or sauce before adding to avoid lumps.
- Optional additions like tomato paste or red wine can add depth to the sauce but are not required.
- The dish pairs nicely with egg noodles, mashed potatoes, or rice for a full meal.
- Leftovers can be refrigerated and reheated gently to preserve creaminess.
