Ingredients
Truffles
- 1/4 cup powdered sugar
- 1 cup white chocolate chips (Ghirardelli highly recommended)
- 1/4 cup unsalted butter
- Zest of 1/2 a navel orange
- 3 tablespoons heavy cream
- 1/2 teaspoon orange extract
- 2-3 drops orange food coloring
- Pinch of salt
Instructions
- Prepare the Coating: Place the powdered sugar in a large, shallow container with a lid and set aside to use for coating the truffles later.
- Ready the Chocolate: Place the white chocolate chips in a medium mixing bowl and set aside.
- Infuse Butter and Cream: In a small saucepan, melt the unsalted butter along with the orange zest over medium heat. Stir in the heavy cream and heat the mixture until it’s just about to boil (scald). Remove from heat and add the orange extract, orange food coloring, and a pinch of salt.
- Combine Ingredients: Pour the hot cream mixture through a fine-mesh sieve over the white chocolate chips, discarding the orange zest. Stir continuously until the mixture is smooth and fully combined.
- Chill the Mixture: Allow the mixture to cool slightly, then cover and refrigerate it until firm enough to handle, about 1 to 2 hours. Stir the mixture every 30 minutes with a fork to ensure even chilling.
- Form Truffles: Using a melon baller or small cookie scoop, scoop heaping teaspoonfuls of the chocolate mixture and roll them into 1-inch round balls. If the mixture is too sticky, dust your hands with a little powdered sugar to make handling easier.
- Coat in Powdered Sugar: Roll each truffle ball in the prepared powdered sugar to coat thoroughly.
- Final Chill: Refrigerate the coated truffles for at least 30 minutes to firm up before serving. Alternatively, you can freeze them for 20 minutes for a quicker set.

- You can substitute orange extract with fresh orange juice for a more natural flavor, but reduce the liquid to prevent truffles from becoming too soft.
