- 1 cup unsalted butter, room temperature (2 sticks)

- 1½ cup sugar
- 4 eggs, room temperature
- 1½ tsp vanilla extract

- 2 cup all purpose flour
- 1½ tsp baking soda
- ½ tsp salt

Instructions
- Preheat and Prepare Pan: Preheat your oven to 350º F. Lightly grease a 13×5 inch or 9×5 inch loaf pan with butter or non-stick spray. If using the smaller 9×5 inch pan, note that cooking time will be longer, or you can make two loaves to reduce baking time.
- Cream Butter, Cream Cheese and Sugar: In a large bowl or stand mixer, beat the room temperature butter, softened cream cheese, and sugar together until the mixture is smooth and creamy. Then beat in the eggs one at a time, followed by the fresh squeezed orange juice and vanilla extract until fully combined.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt until evenly mixed. Gradually add the dry ingredients to the wet ingredients, stirring gently until just incorporated to avoid overmixing.
- Fold in Cranberries and Walnuts: Carefully fold in the fresh cranberries and chopped walnuts (if using) to evenly distribute them throughout the batter without crushing the berries.
- Bake the Bread: Pour the batter into the prepared loaf pan and bake in the preheated oven for 25 minutes. After 25 minutes, loosely cover the top of the loaf with a piece of aluminum foil shaped like a tent to prevent the bread from browning too much on top. Continue baking for an additional 25-35 minutes, or until a toothpick inserted into the center comes out clean.
