Description

This Crazy Good Spicy Italian Popcorn is a flavorful, crunchy snack packed with zesty garlic butter, spicy red pepper flakes, and savory Parmigiano-Reggiano cheese. Perfect for movie nights or casual gatherings, this popcorn offers an exciting twist on the classic buttery treat with Italian herbs and a spicy kick.

Ingredients

Popcorn

  • 3 tablespoons vegetable oil
  • ½ cup popcorn kernels

Spicy Garlic Butter Sauce

  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced

Seasoning Mix

  • ¼ cup grated Parmigiano-Reggiano
  • 1 teaspoon red pepper flakes
  • 2 teaspoons dried oregano
  • ½ teaspoon salt

Instructions

  1. Heat Oil and Popcorn: Heat the vegetable oil in a very large pan over medium-high heat. Add the popcorn kernels and cover with a tight fitting lid or foil. Wait for the popping to start, shaking the pan gently every now and then to keep kernels moving. Once the popping slows to 2 to 3 seconds between pops, remove the pan from heat.
  2. Prepare Garlic Butter: In a medium microwave-safe bowl, melt the butter. Add the minced garlic and microwave for an additional 1 minute. Strain the garlic butter through a fine mesh strainer into a small bowl to remove the garlic pieces.
  3. Make Italian Seasoning Blend: Using a mini food processor or spice grinder, combine grated Parmigiano-Reggiano, red pepper flakes, dried oregano, and salt. Grind until the mixture reaches a coarse sand-like texture.
  4. Toss the Popcorn: Transfer the freshly popped popcorn to a large serving bowl. Pour the garlic butter over the popcorn and toss to coat evenly. Sprinkle the cheese and seasoning blend over the coated popcorn and toss again until uniformly covered.
  5. Serve: Serve the popcorn warm or at room temperature for the best flavor experience.

Notes

  • Make sure the pan is large enough and has a tight-fitting lid to avoid popcorn flying out while popping.
  • Shaking the pan gently during popping ensures even heat distribution and prevents burning.
  • Straining the garlic butter removes any burnt garlic bits, ensuring a smooth sauce.
  • Adjust the amount of red pepper flakes to tweak the spiciness level to your preference.
  • Use freshly grated Parmigiano-Reggiano for the best flavor and texture.
  • Store leftover popcorn in an airtight container to maintain freshness longer.
