Ingredients

Cheese Base

  • 16 ounces Mozzarella cheese, shredded (4 cups)
  • 2 tablespoons unsalted butter

Vegetables & Aromatics

  • 2 jalapeños, seeded and diced
  • 1/4 medium yellow onion, diced
  • 1 celery rib, diced
  • 4 cloves garlic, minced
  • 1/4 cup chopped cilantro

Spices & Seasonings

  • Pinch cayenne pepper
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon kosher salt

Main Protein & Extras

  • 1 pound cooked crawfish tails, thawed
  • 2 tablespoons freshly squeezed lime juice
  • 1 teaspoon Worcestershire sauce

To Serve

  • Warm flour or corn tortillas
  • Salsa


Instructions

  1. Preheat and melt cheese: Preheat your oven to 350°F (175°C). Lightly grease an oven-proof skillet and spread the shredded mozzarella cheese evenly inside. Place the skillet in the oven and bake until the cheese is fully melted and bubbly, approximately 15 minutes.
  2. Sauté vegetables and aromatics: While the cheese melts, place a skillet over medium-low heat and melt the unsalted butter. Add the diced jalapeños, yellow onion, and celery to the skillet. Stir occasionally and cook until the vegetables soften, about 5-7 minutes. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  3. Season and add crawfish: Mix in the chopped cilantro, kosher salt, ground cumin, dried oregano, and a pinch of cayenne pepper. Stir well to blend the spices evenly. Add the cooked, thawed crawfish tails and fold them gently into the vegetable mixture. Then, stir in the freshly squeezed lime juice and Worcestershire sauce. Taste and adjust seasonings if needed. Cook for about one more minute just until the crawfish are warmed through, then remove from heat.
  4. Assemble and serve: Carefully remove the skillet with the melted cheese from the oven. Top the melted cheese with the warm crawfish mixture evenly. Serve immediately alongside warm flour or corn tortillas and salsa. To enjoy, spoon the cheesy crawfish mixture into tortillas and add salsa as desired to create delicious tacos.
