- 1 tsp lemon zest
- 1 1/2 tsp prepared horseradish
- Pinch cayenne pepper (adjust for heat)
- 3/4 tsp smoked paprika
- 1/4 tsp kosher salt
Instructions
- Prepare the Crab: Spread the lump crab meat out on a sheet pan or plate and carefully pick through it to remove any remaining shells to ensure a pure, shell-free crab mixture.
- Mix Wet Ingredients: In a large bowl, whisk together 1 large egg, 1 Tbsp mayonnaise, 1 tsp Dijon mustard, 1/2 tsp dry mustard, 1 1/2 tsp Old Bay seasoning, 1/2 tsp Worcestershire sauce, 1/2 tsp hot sauce, 1 tsp lemon juice, 1 tsp lemon zest, and 1/4 tsp kosher salt until fully combined.
- Combine Crab and Bind: Add the crab meat to the bowl with the wet mixture, then add 2 Tbsp chopped parsley and 1/3 cup Italian breadcrumbs. Adjust seasoning by adding more cayenne for heat or lemon juice for brightness. Refrigerate until serving.
- Pan-Fry Crab Cakes: Heat neutral oil in a cast iron skillet over medium heat until it reaches 350°F (175°C) or is hot enough to sizzle. Carefully place 2 crab cakes into the skillet without crowding them. Cook for 2-3 minutes until the bottom is golden brown, then gently flip and cook the other side for another 2-3 minutes. Remove cooked crab cakes and drain on a rack or paper towels. Repeat with remaining crab cakes.
