Ingredients

Cornbread Topping

  • 2 boxes Jiffy Cornbread Mix
  • 2 eggs
  • ⅔ cup milk

Filling

  • 1 ½ pounds lean ground beef
  • 1 cup yellow onion, diced
  • 14.5 ounce can corn, lightly drained
  • 10 ounce Ro*tel (do not drain)
  • 14.5 ounce pinto beans (do not drain)
  • 1 ounce taco seasoning


Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 375 degrees Fahrenheit. Spray a 9×13 casserole dish with non-stick cooking spray to prevent sticking and set it aside for later use.
  2. Make Cornbread Batter: In a medium mixing bowl, prepare the cornbread batter by combining the Jiffy Cornbread Mix with the eggs and milk according to package instructions. Stir until smooth and set aside.
  3. Cook Beef Mixture: Heat a large skillet over medium heat and brown the ground beef along with the diced yellow onions until the beef is no longer pink. Once cooked, drain any excess fat thoroughly. Then add the drained corn, undrained Ro*tel, undrained pinto beans, and taco seasoning to the skillet. Stir well to combine all ingredients evenly.
  4. Assemble Casserole: Spoon the beef and bean mixture evenly into the prepared casserole dish. Carefully spoon the prepared cornbread batter over the top and smooth it out evenly with a spatula for a uniform layer.
  5. Bake: Place the casserole uncovered in the preheated oven and bake for 40 minutes. The casserole is done when a toothpick inserted in the center comes out clean and the cornbread topping is golden brown.
  6. Rest Before Serving: Remove the casserole from the oven, cover loosely with foil, and let it sit for 10 minutes to set before serving. This helps improve the texture and makes it easier to serve.
