Description
Delicious and nutritious Cottage Cheese Muffins made with wholesome rolled oats, low-fat cottage cheese, and a hint of warm spices. These soft, moist muffins are naturally sweetened with maple syrup and studded with mini chocolate chips, perfect for a healthy breakfast or snack.
Ingredients
Dry Ingredients
- 1 1/4 cup rolled oats (125 grams)
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/4 cup + 2 tablespoons mini chocolate chips (about 90 grams)
Wet Ingredients
- 1 cup low-fat cottage cheese (226 grams)
- 2 large eggs
- 2 tablespoons maple syrup
- 2 teaspoons vanilla extract
Instructions
- Preheat oven and prepare muffin tin: Preheat your oven to 350°F (175°C). Line a muffin tin with silicone muffin liners or grease a nonstick muffin tin. Avoid using paper liners as the muffins tend to stick.
- Blend the batter: In a blender, combine the cottage cheese, rolled oats, eggs, maple syrup, vanilla extract, baking powder, cinnamon, nutmeg, and salt in the order listed. Blend until smooth, about 30 seconds, taking care not to over-blend to retain a good texture.
- Mix in chocolate chips: Stir in most of the mini chocolate chips, reserving about 1 tablespoon for topping. Let the batter rest for 5 minutes to thicken.
- Fill muffin tins and bake: Use a cookie scoop or spoon about 2 1/2 tablespoons of batter into each of the 9 muffin cups. Sprinkle the remaining chocolate chips on top. Bake for 22-25 minutes until the muffins are golden brown and cooked through.
- Cool and serve: Allow the muffins to cool in the tin for a few minutes before removing. Enjoy warm or at room temperature as a wholesome snack or breakfast option.
Notes
- For best results, use low-fat cottage cheese.
- Letting the batter sit allows it to thicken and improves muffin texture.
- You can substitute maple syrup with honey if preferred.
- Do not over-blend the batter to avoid gummy muffins.
- Silicone liners help prevent sticking better than paper liners.
