Ingredients

Chocolate Mixture

  • 1/2 cup dark chocolate chips (I used Lily’s)

Mousse Base

  • 2 cups 2% cottage cheese
  • 3-4 tablespoons honey (depending on how sweet you like it)
  • 2 tablespoons unsweetened cocoa powder
  • 2 teaspoons vanilla extract
  • 1-2 tablespoons milk (as needed)


Instructions

  1. Melt the Chocolate: Pour the chocolate chips into a microwave-safe dish and microwave in 20-30 second increments, stirring well in between intervals, until the chocolate is completely melted and smooth.
  2. Blend the Ingredients: Add the cottage cheese, melted chocolate, honey, cocoa powder, and vanilla extract to a food processor or high-speed blender. Blend on high for 20-30 seconds until smooth. Scrape down the sides with a spatula, then blend again to ensure an even texture. If the mixture is too thick or grainy, add 1-2 tablespoons of milk and continue blending until creamy and smooth.
  3. Chill the Mousse: Spoon the blended mixture into individual bowls or glasses. Refrigerate for at least one hour to allow the mousse to firm up and develop its signature texture. The longer it chills, the thicker and more mousse-like it becomes.
  4. Serve: Garnish the mousse with a dollop of whipped cream, chocolate shavings, or your favorite fresh fruit if desired. Enjoy the high-protein, chocolatey treat!
