Ingredients
Chocolate
- ¼ cup chocolate chips plus 2 tablespoons, divided
- Extra chocolate chips for the topping, optional
Wet Ingredients
- 1 cup cottage cheese
- 2 large eggs
- ¾ cup coconut sugar
- 1 teaspoon vanilla extract
- ⅓ cup milk or milk alternative
Dry Ingredients
- 1 cup oat flour
- ½ cup cocoa powder
- 1 teaspoon instant espresso powder
- 1 teaspoon baking powder
Instructions
- Preheat and prepare pan: Preheat oven to 350℉. Line an 8×8 inch pan with parchment paper ensuring it covers the bottom completely and extends up two sides for easy lifting. Spray the pan lightly with nonstick spray.
- Melt chocolate chips: Melt the ¼ cup chocolate chips in the microwave, heating in 30-second intervals and whisking in between until fully melted. Allow the melted chocolate to cool slightly to avoid cooking the batter when added.
- Blend wet ingredients: In a blender or food processor, combine the cottage cheese, eggs, coconut sugar, milk, and vanilla extract. Blend until the mixture is completely smooth and homogenous. Set aside.
- Mix dry ingredients and combine: In a large bowl, whisk together oat flour, cocoa powder, instant espresso powder, and baking powder. Pour the smooth wet mixture into the dry ingredients and stir gently until just combined. Fold in the cooled melted chocolate and then fold in the reserved 2 tablespoons of chocolate chips to create pockets of melty chocolate inside the brownies.
- Transfer and bake: Pour the batter into the prepared pan, spreading evenly. Bake for 20-30 minutes until the brownies are set and a toothpick inserted comes out mostly clean but with a few moist crumbs. Avoid overbaking to keep them fudgy.
- Cool and optionally top: Remove from oven and allow the brownies to cool fully in the pan, approximately 2 hours. For an extra touch, sprinkle additional chocolate chips on top while still warm to adhere and create a decorative finish.
- Remove and serve: To remove brownies from the pan, run a thin knife around the edges where there is no parchment paper if necessary. Use the parchment paper sling to lift brownies out of the pan, cut into 9 squares, and serve.
Notes
- Use large chocolate chips for pockets of melty chocolate, but mini chocolate chips are great for topping and decoration.
- Do not overblend the wet ingredients to avoid heating the mixture too much.
- Allow brownies to cool completely before cutting for clean slices.
- Oat flour can be substituted with all-purpose flour if not gluten-free, but baking time may vary slightly.
