Description

Corned Beef Irish Tacos combine tender, flavorful corned beef with a tangy kiwi coleslaw and creamy lime-infused crema, all served on warm, lightly charred corn tortillas. This fusion dish offers a delightful balance of savory, sweet, and spicy flavors perfect for a casual meal or entertaining guests in just 30 minutes.

Ingredients

Corned Beef

  • pounds corned beef

Coleslaw

  • 2 cups oil and vinegar coleslaw
  • 1 medium kiwi, peeled and cubed

Tortillas & Cheese

  • 8 corn tortillas
  • 1 cup shredded cheddar cheese (or more, as desired)

Crema

  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 1 tbsp lime juice
  • ¼ tsp sea salt
  • 1 tsp Tabasco or other hot sauce (optional)

Instructions

  1. Cook Corned Beef: Cook the corned beef according to your preferred recipe or package directions until tender. Allow it to cool slightly, then shred or slice the meat thinly to prepare for serving.
  2. Prepare Coleslaw: Take 2 cups of oil and vinegar coleslaw and mix in one peeled and cubed medium kiwi to add a fresh, sweet contrast. Stir until well combined.
  3. Make Crema: In a bowl, combine ¼ cup mayonnaise, ¼ cup sour cream, 1 tablespoon lime juice, and ¼ teaspoon sea salt. Whisk the mixture thoroughly until smooth. For a kick of heat, optionally add ½ to 1 teaspoon of Tabasco or your favorite hot sauce and mix again.
  4. Heat and Char Tortillas: Warm the corn tortillas by charring them carefully over an open flame or in a cast-iron skillet to add a smoky flavor and slight crispness.
  5. Assemble Tacos: Place the warmed tortillas in tortilla holders or on a serving plate. Sprinkle each tortilla with shredded cheddar cheese, then layer with the sliced or shredded corned beef. Top generously with the kiwi-infused coleslaw and drizzle the lime crema over everything for a creamy, tangy finish.

Notes

  • For best results, use freshly cooked corned beef or well-seasoned deli corned beef.
  • Kiwi in the coleslaw adds a unique sweet and tart flavor; ensure it is ripe but firm for the best texture.
  • If you prefer a milder dish, omit the hot sauce from the crema.
  • You can substitute cheddar with other melting cheeses like Monterey Jack or Pepper Jack for variation.
  • To keep the tacos warm before serving, cover them loosely with foil.
