  • 1 and 1/2 cups (270g) fresh, canned (and drained), or frozen (and thawed) corn kernels
  • 1 and 1/2 cups (270g) cooked/canned black beans, drained and rinsed (about 1 can)
  • 1/2 small red onion, diced
  • 1 cup (150g) diced tomato
  • 1 avocado, chopped
  • 1/4 cup chopped cilantro
  • 1 clove garlic, minced
  • optional: 1 small jalapeño pepper, seeded and chopped

Condiments & Seasonings

  • 2 Tablespoons olive oil
  • juice of 1 lime
  • 1 teaspoon salt
  • pinch ground pepper
  • pinch cayenne pepper


Instructions

  1. Combine Ingredients: Add corn kernels, black beans, diced red onion, tomato, chopped avocado, cilantro, and minced garlic into a large bowl. Pour in the olive oil and squeeze the juice of one lime over the mixture. Add salt, ground pepper, cayenne pepper, and the chopped jalapeño if using. Stir everything together gently to combine flavors without mashing the avocado.
  2. Refrigerate and Marinate: Cover the bowl with a lid or plastic wrap and place it in the refrigerator for at least 1 hour or up to 1 day. This resting time allows the flavors to blend beautifully, and the acidity from the lime juice helps prevent the avocado from browning.
