Description

These Cookie Dough Energy Bites are a quick and easy no-bake snack packed with oats, coconut, peanut butter, and chocolate chips. Perfect for a healthy energy boost, they combine wholesome ingredients into bite-sized treats that you can freeze and enjoy anytime.

Ingredients

Dry Ingredients

  • 2 cups rolled oats
  • 2 cups flaked unsweetened coconut
  • 1/4 cup chia seeds
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips

Wet Ingredients

  • 1/2 cup peanut butter (extra as needed)
  • 1/2 cup honey (extra as needed)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Pulse oats and coconut: Place the rolled oats and flaked unsweetened coconut in a food processor and pulse until they are coarsely ground, creating a coarse flour-like texture.
  2. Combine remaining ingredients: Add the peanut butter, honey, chia seeds, salt, vanilla extract, and chocolate chips to the food processor. Pulse again until everything is well mixed and the chocolate chips are broken into smaller pieces for easier distribution.
  3. Form into balls: Remove the mixture from the processor. If the dough seems too dry, gradually add more peanut butter or honey until it reaches a sticky, pliable consistency. Then roll the mixture into small bite-sized balls using your hands.
  4. Freeze to set: Place the formed balls on a tray and freeze them until they are firm. Once set, store the energy bites in the freezer or refrigerator to maintain freshness and texture.

Notes

  • If the mixture is too dry, add peanut butter and honey a little at a time until the dough holds together.
  • Store the energy bites in an airtight container in the freezer for up to a month or in the refrigerator for up to a week.
  • These bites make a convenient grab-and-go snack suitable for any time of the day.
  • Feel free to substitute almond butter for peanut butter for a different flavor profile.
  • You can use dairy-free chocolate chips to make this recipe vegan.
