Ingredients

Potatoes

  • 2 pounds Yukon gold or Russet potatoes, peeled and cut into chunks

Greens and Aromatics

  • 4 cups lightly packed chopped kale or cabbage
  • 3 green onions, thinly sliced (reserve some for garnish)

Dairy and Seasoning

  • 6 tablespoons unsalted butter or ghee
  • ½ cup milk (any type)
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Boil the Potatoes: Place the peeled and chunked potatoes in a large pot and cover with cold water, ensuring about an inch of water sits above them. Bring the water to a boil, then cook the potatoes for 15 to 20 minutes, or until they are tender and easily pierced with a fork.
  2. Cook the Greens: While the potatoes boil, melt the butter in a separate large pot over medium heat. Add the chopped kale or cabbage and cook for 3 to 4 minutes until the greens are wilted and soft. Stir in the sliced green onions, reserving a small amount for garnish, and cook together for an additional minute to blend the flavors.
  3. Mash and Combine: Once the potatoes are cooked, drain them in a colander. Transfer the drained potatoes to the pot with the wilted greens. Pour in the milk and season with salt and pepper. Mash the mixture together until it is fluffy and well combined, incorporating all the flavors uniformly.
  4. Serve: Move the colcannon to a serving bowl. Garnish with a light sprinkle of the reserved green onions and top with a pat of butter for added richness. Serve warm as a satisfying side dish.
