- 1/2 cup whole milk

Instructions
- Prepare Potatoes: Wash, peel, and cut the potatoes into one-inch cubes. Place them in a large pot, cover with water, and bring to a boil. Cook until very tender and easily pierced with a fork, about 10 minutes. Drain in a colander.
- Prepare Cabbage and Aromatics: Remove damaged outer leaves of cabbage, cut in half, then quarters, removing the core. Slice into thin strips and wash thoroughly. Mince garlic and slice green onions, reserving some green onions for garnish.
- Sauté Garlic and Green Onions: Using the same large pot, melt butter over medium heat. Add minced garlic and sliced green onions, sautéing for 1-2 minutes until garlic softens.
- Cook Cabbage: Add shredded cabbage and chicken broth to the pot. Cover with a lid and bring to a boil. Let cabbage simmer, stirring occasionally, until wilted and tender, about 10-12 minutes. The white thicker parts should become translucent.
- Mash and Combine: Return drained potatoes to the pot with cooked cabbage. Add whole milk and freshly cracked pepper. Mash everything together until well combined. Season with salt to taste.
- Serve: Serve the colcannon warm, garnished with the reserved sliced green onions.
