Ingredients

Truffle Mixture

  • 1 13.5 oz can of chickpeas (drained and rinsed)
  • 1/2 cup cashew butter (or any other nut or seed butter)
  • 1/2 cup dark chocolate (melted, dairy or dairy-free)
  • 2 tbsp instant coffee

Coating and Garnish

  • 3/4 cup dark chocolate (melted)
  • Coffee beans (for garnish)


Instructions

  1. Prepare Ingredients: Drain and rinse one can of chickpeas thoroughly. Melt the 1/2 cup of dark chocolate either in the microwave in short bursts or over a double boiler on the stovetop until smooth.
  2. Blend the Mixture: Add the rinsed chickpeas, cashew butter, melted dark chocolate, and instant coffee to a food processor. Blend for about 45-60 seconds until the mixture is smooth and well incorporated.
  3. Form the Truffles: Using a cookie scoop, portion out the mixture onto a baking sheet lined with parchment paper. Roll each portion into smooth balls. Place the tray in the freezer for 15-20 minutes to allow the truffles to harden.
  4. Coat with Chocolate: While the truffles are chilling, melt the remaining 3/4 cup of dark chocolate for dipping. Remove the truffles from the freezer and dip each one thoroughly in the melted chocolate. Place them back on the parchment-lined baking sheet. Garnish each truffle with a coffee bean, then return them to the freezer to set completely.
  5. Storage and Serving: Once hardened, transfer the truffles to a container and store them in the refrigerator. Enjoy within 7-10 days if refrigerated, or store in the freezer to keep for 30-60 days.
