Description

This classic Coffee Cake is a moist and tender treat perfect for breakfast or brunch. It features a cinnamon-sugar swirl layered between soft cake batter and a buttery topping, baked to golden perfection in a 9×13-inch pan. With simple ingredients and easy steps, this coffee cake is ideal for sharing with friends and family alongside your favorite morning coffee.

Ingredients

Wet Ingredients

  • 2 large eggs, lightly beaten
  • 1 cup vegetable oil
  • 1¼ cups milk
  • 1 tablespoon vanilla extract

Dry Ingredients

  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt

Cinnamon Sugar Topping

  • 1¼ cups packed light brown sugar
  • 1 tablespoon ground cinnamon
  • ¼-⅓ cup unsalted butter, melted

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish to prevent the cake from sticking and set it aside.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together the lightly beaten eggs, vegetable oil, milk, and vanilla extract until well combined and smooth.
  3. Combine Dry Ingredients: In a separate medium bowl, sift together the all-purpose flour, granulated sugar, baking powder, and salt, ensuring all ingredients are evenly distributed.
  4. Make Batter: Gradually add the dry ingredients to the wet mixture, stirring well to form a smooth, thick batter. Pour half of this batter evenly into the prepared baking dish.
  5. Prepare Cinnamon Sugar Mixture: In another bowl, thoroughly combine the packed light brown sugar and ground cinnamon to create the cinnamon sugar topping.
  6. Layer Cinnamon Sugar: Sprinkle half of the cinnamon sugar mixture evenly over the batter in the baking dish. Carefully spoon or spread the remaining batter over this cinnamon sugar layer, then sprinkle the remaining cinnamon sugar on top.
  7. Add Butter Topping: Drizzle the melted unsalted butter over the top layer of cinnamon sugar, using as much or as little as desired to add richness and help create a slightly crisp topping.
  8. Bake: Place the baking dish in the preheated oven and bake for 35-40 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Remove from oven and allow to cool slightly before serving warm.

Notes

  • You can substitute milk with a dairy-free alternative for a lactose-free version.
  • Ensure the baking powder is fresh to help the cake rise properly.
  • For a crunchier topping, add chopped nuts like walnuts with the cinnamon sugar.
  • Store leftovers tightly covered at room temperature for up to 2 days or freeze for longer storage.
