Description

Classic Potato Latkes are crispy, golden fried potato pancakes made with shredded Yukon Gold potatoes and onions, bound with egg and flour, seasoned with kosher salt, and fried to perfection in avocado or light olive oil. These latkes are easy to make and perfect as a traditional side dish or snack, enjoyed fresh and crispy straight from the pan.

Ingredients

Main Ingredients

  • 1 lb Yukon Gold potatoes, peeled and shredded
  • 1 small onion, peeled and shredded
  • 1 large egg, whisked
  • 2 tbsp flour
  • 1 tsp kosher salt (adjust to taste)
  • 1/2 cup avocado or light olive oil for frying

Instructions

  1. Rinse & Shred: Peel the potatoes and onion, then shred them finely using a food processor or a hand grater to achieve a consistent texture suitable for latkes.
  2. Squeeze: Place the shredded potatoes into a cheesecloth or clean kitchen towel and squeeze out as much liquid as possible to ensure your latkes will be crispy and not soggy.
  3. Combine: In a large bowl, mix the drained shredded potatoes and onion with the whisked egg, flour, and kosher salt. Toss everything together until well combined and the mixture holds together when pressed.
  4. Preheat & Place: Heat a skillet or frying pan over medium heat and add the oil. Once hot, drop spoonfuls of the latke batter into the pan, then press each spoonful gently with the back of the spoon to flatten into pancake shapes.
  5. Fry: Cook the latkes until the edges and bottom are golden brown and crisp, then carefully flip and fry the other side. Continue cooking until all latkes are golden on both sides and cooked through.
  6. Serve: Remove latkes from the pan and drain on paper towels if desired. Serve immediately to enjoy them while hot and crispy.

Notes

  • Remove excess moisture from shredded potatoes to prevent soggy latkes.
  • Use a neutral oil with a high smoke point like avocado or light olive oil for frying.
  • Adjust salt to taste according to preference.
  • Serve latkes immediately for best texture; they lose crispiness if left to sit too long.
  • Optional toppings include sour cream or applesauce for traditional serving.
