Ingredients

  • ½ cup sugar
  • 3 tablespoons cornstarch
  • 1 large egg
  • 2 large egg yolks
  • 3 tablespoons unsalted butter, cut into pieces
  • 2 teaspoons vanilla extract

Fruit Topping and Glaze

  • About 4 cups fresh mixed berries of choice (such as strawberries, blueberries, raspberries), plus other fruits like sliced kiwi or mango
  • ¼ cup apricot jam

Instructions

  1. Make the Crust: Prepare the pâte sucrée dough according to your recipe, then bake it until golden and fully cooled. This creates the crisp and sweet base for your tart.
  2. Make the Pastry Cream: In a medium pot, heat the whole milk just until boiling. Meanwhile, whisk sugar, whole egg, egg yolks, and cornstarch in a heatproof bowl until smooth and lighter in color, about 2 minutes. Temper the egg mixture by pouring about a quarter of the hot milk into it gradually while whisking constantly. Then pour this mixture back into the pot with the remaining milk. Return to medium heat and whisk continuously to prevent scrambling until the cream thickens and forms lazy, thick bubbles, roughly 2 minutes. Remove from heat, stir in butter and vanilla extract, then cook for another minute while whisking. Pour the pastry cream into a shallow bowl, cover with plastic wrap pressed directly on the surface to prevent skin formation, and chill until cold for a few hours or up to 2 days.
  3. Assemble the Tart: Remove the tart ring and place the cooled tart shell on a serving platter. Whisk the chilled pastry cream smoothly, then evenly spread it into the tart shell using an offset spatula. Arrange the fresh mixed berries and other prepared fruits attractively over the cream. In a small saucepan, gently heat the apricot jam with 1 tablespoon water over medium heat, whisking until thin. Optionally strain to remove chunks.
