Ingredients

Eggs

  • 1 dozen large eggs

Yolk Filling

  • 1/4 to 1/3 cup mayonnaise (see notes)
  • 1 tablespoon yellow mustard
  • 3-4 tablespoons sweet pickle cubes, drained (see notes)
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Toppings (optional)

  • Sprinkle of paprika
  • Hot sauce or sriracha
  • Chopped fresh parsley
  • Snipped fresh chives
  • Capers
  • Pimientos
  • Sprinkle of cayenne
  • Caviar
  • Cooked, crumbled bacon

Instructions

  1. Boil the eggs: Place eggs in the bottom of a large pot and cover with cold water. Bring water to a boil over high heat, then turn off the heat. Cover the pot and let the eggs sit for 20 minutes to cook through using residual heat.
  2. Cool the eggs: Drain the hot water and rinse the eggs with cold water to stop the cooking process and make them easier to handle. Alternatively, you may use an Instant Pot to hard boil eggs for easier peeling.
  3. Peel and halve eggs: Peel the cooled eggs carefully, then slice them in half lengthwise. Arrange the egg white halves on a serving plate.
  4. Prepare yolk filling: Scoop out the yolks into a small bowl. Mash the yolks thoroughly using a fork or pastry cutter. Add mayonnaise, mustard, drained sweet pickle cubes, kosher salt, and black pepper. Mix until smooth and well combined. Taste and adjust seasoning if needed.
  5. Fill egg whites: Spoon or pipe the yolk mixture back into the egg white halves, mounding the filling slightly for an appealing look. A pastry bag or plastic bag with a snipped corner can help with neat presentation.
  6. Add toppings and serve: Garnish the deviled eggs with your choice of toppings such as paprika, fresh herbs, hot sauce, or bacon. Serve immediately or refrigerate until ready to serve.
