Ingredients

Pie Crust

Custard Filling

  • 3/4 cup (150 grams) granulated sugar

  • 2 large eggs
  • 2 large egg yolks
  • 1-1/2 cups (340 grams) whole milk
  • 1 cup (227 grams) heavy cream
  • 2 teaspoons vanilla extract

Instructions

  1. Make the Pie Dough: Add the flour, powdered sugar, and salt to the bowl of a food processor. Pulse until well combined. Add the butter and pulse 5-7 times until the butter is broken down into tiny pebble-sized pieces.
  2. Incorporate the Egg: With the food processor running, add the egg and continue processing until the dough forms a cohesive ball around the blade, about 1 minute.
  3. Roll Out the Dough: Transfer the dough to a lightly floured surface and roll it out into an 11-inch circle. Carefully line a 9-inch pie plate, crimp the edges to your liking.
  4. Chill the Dough: Place the prepared pie shell into the freezer to chill while preheating the oven.
  5. Preheat Oven: Set the oven to 375°F (190°C). Place one rack in the lower third and another in the middle of the oven.
