  • 1 teaspoon baking powder
  • ½ teaspoon fine salt

Wet Ingredients

  • 2 eggs
  • 3 teaspoons honey
  • 1 teaspoon vanilla extract
  • ⅓ cup (75 grams) unsalted butter (melted and cooled)


Instructions

  4. Prepare Baking Sheets: Keep the oven on, line a large or two smaller baking sheets with parchment paper to prepare for the biscotti logs.

  14. Cool Logs: Remove from the oven and let the logs cool on the baking sheets for 10 minutes to set.
  15. Reduce Oven Temperature: Lower the oven temperature to 300°F (150°C) for the second bake.
  16. Slice Logs: While still warm, carefully cut each log diagonally into 15 slices about ½ inch thick. For easier cutting, use a serrated knife and a gentle sawing motion.
  17. Second Bake: Arrange the slices cut side up on the lined baking sheets and return to the oven for 10-15 minutes to dry and crisp the biscotti fully.
