Description

This Homemade Cinnamon Roll Cake blends the warm, comforting flavors of a classic cinnamon roll into an easy-to-make cake, topped with a sweet vanilla glaze. Perfect for dessert or brunch, this cake features a tender vanilla base swirled with a gooey cinnamon filling and finished with a luscious icing drizzle.

Ingredients

For the Cake:

  • 3 cups all-purpose flour
  • 1 cup white granulated sugar
  • 4 teaspoons baking powder
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 ½ cups milk
  • ½ cup (1 stick) salted butter, melted (slightly cooled)

For the Cinnamon Filling:

  • ¾ cup salted butter, softened to room temperature (1 ½ sticks)
  • 1 cup packed light brown sugar
  • 2 Tablespoons all-purpose flour
  • 1 Tablespoon ground cinnamon

For the Glaze:

  • 2 cups powdered sugar
  • 5 Tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Spray a 9×13-inch baking dish with nonstick cooking spray that contains flour for easy release.
  2. Make the cake batter: In a large bowl or stand mixer bowl, combine 3 cups all-purpose flour, 1 cup white granulated sugar, and 4 teaspoons baking powder. Add 2 large eggs, 2 teaspoons vanilla extract, and 1 ½ cups milk. While mixing, slowly stream in the ½ cup melted salted butter. Mix just until combined to avoid tough texture.
  3. Spread batter in pan: Evenly spread the batter into the prepared 9×13-inch pan, smoothing the top gently with a spatula.
  4. Prepare cinnamon filling: In a small bowl, mix ¾ cup softened salted butter, 1 cup packed light brown sugar, 2 Tablespoons all-purpose flour, and 1 Tablespoon ground cinnamon until thoroughly combined.
  5. Add cinnamon filling to batter: Drop spoonfuls of the cinnamon filling over the surface of the cake batter in the pan.
  6. Create swirled marble effect: Using a butter knife, drag through the cake batter and cinnamon filling to create swirly, marble-like patterns.
  7. Bake the cake: Place in the preheated oven and bake for 35 to 40 minutes, or until a knife inserted into the center comes out clean.
  8. Make the glaze: Whisk together 2 cups powdered sugar, 5 Tablespoons milk, and 1 teaspoon vanilla extract in a bowl. Adjust consistency by adding more powdered sugar for thickness or more milk for thinness.
  9. Glaze the cake: Pour the glaze evenly over the warm cake. Allow the cake to cool before slicing for cleaner cuts.
  10. Serve: Serve warm or at room temperature, enjoying the rich cinnamon roll flavor in cake form.

Notes

  • Do not overmix the batter to keep the cake tender and soft.
  • For easier slicing, allow the cake to cool completely after glazing.
  • You can adjust the glaze thickness to your liking by adding more powdered sugar or milk.
  • This cake can be stored covered at room temperature for up to 2 days or refrigerated for up to 5 days.
  • Reheat slices briefly in the microwave to enjoy a warm treat.
