Description

This Cinnamon Roll Banana Bread combines the moist texture of classic banana bread with the sweet cinnamon swirl of a cinnamon roll. Perfectly spiced and topped with a luscious vegan cream cheese frosting, this loaf is an irresistible treat for breakfast or dessert, made entirely dairy-free and easily adaptable to gluten-free diets.

Ingredients

Bread Batter

  • 3 overripe mashed bananas
  • 4 tbsp melted vegan butter
  • 3/4 cup maple syrup
  • 1 cup unsweetened almond or oat milk
  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 1/2 cup regular or gluten free all purpose flour
  • 1 cup old fashioned rolled oats

Cinnamon Swirl

  • 4 tbsp melted vegan butter
  • 1/3 cup light brown sugar
  • 2 tbsp cinnamon

Vegan Cream Cheese Frosting

  • 3/4 cup powdered sugar
  • 2 tbsp melted vegan butter
  • 2 oz softened vegan cream cheese

Instructions

  1. Preheat Oven: Begin by preheating your oven to 375°F (190°C). Grease a metal loaf pan thoroughly with non-stick spray to ensure easy removal of the bread after baking.
  2. Prepare Batter: In a large mixing bowl, mash the overripe bananas with a fork. Add the melted vegan butter, maple syrup, plant-based milk, vanilla extract, cinnamon, baking powder, baking soda, and salt. Stir well to combine. Gradually add the flour and rolled oats, mixing until a smooth batter forms without overmixing.
  3. Transfer Batter: Pour and spread the batter evenly into the prepared loaf pan, smoothing the top with a spatula or back of a spoon.
  4. Make Cinnamon Swirl: In a separate small bowl, mix the melted vegan butter, light brown sugar, and cinnamon until fully combined. Drizzle this mixture over the top of the batter in the loaf pan.
  5. Create Swirl Effect: Using a spoon, gently fold the cinnamon mixture into the batter on top, swirling it to create a marbled cinnamon roll effect without fully mixing it in.
  6. Bake: Place the loaf pan in the oven and bake for 55-60 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  7. Prepare Frosting: While the bread is baking, whisk together the powdered sugar, melted vegan butter, and softened vegan cream cheese until smooth and creamy to make the vegan cream cheese frosting.
  8. Cool and Frost: After baking, allow the banana bread to cool in the pan for a couple of minutes. Then gently drizzle the vegan cream cheese frosting over the top while the loaf is still warm for an extra gooey finish.
  9. Serve: Slice and enjoy this warm, flavorful vegan banana bread with a rich cinnamon swirl and creamy frosting.
