Description
Delightful Cinnamon Panko Cookies with a crispy texture from panko breadcrumbs and a sweet, cinnamon-infused flavor. These cookies are rolled in confectioners’ sugar before and after baking, creating a crackled, sugary exterior perfect for a cozy snack or dessert.
Ingredients
Cookie Dough
- 1/2 cup unsalted butter, softened
- 1/2 cup confectioners’ sugar
- 1 tablespoon vanilla extract
- 3/4 cup all-purpose flour
- 3/4 cup panko bread crumbs
- 1 teaspoon ground cinnamon
- 1/4 teaspoon kosher salt
Coating
- 1 cup confectioners’ sugar
Instructions
- Make the dough: Preheat your oven to 350°F. In a large bowl, cream together the softened butter and 1/2 cup confectioners’ sugar until the mixture becomes light and fluffy. Beat in the vanilla extract. In a separate bowl, whisk together the all-purpose flour, panko bread crumbs, ground cinnamon, and kosher salt. Gradually beat this dry mixture into the creamed butter and sugar mixture until fully combined.
- Shape the dough: Roll the dough into 1-inch balls using your hands. Drop each dough ball into the remaining 1 cup of confectioners’ sugar, rolling lightly to evenly coat each ball. Place the coated dough balls on ungreased baking sheets. For easy cleanup and to prevent sticking, you can line the baking sheets with parchment paper.
- Bake and coat: Bake the cookies in the preheated oven for 10 to 12 minutes, until they are lightly browned and the tops have developed characteristic cracks. Remove the cookies from the baking sheet and transfer to a wire rack to cool completely. Once cool, toss the cookies again in the remaining confectioners’ sugar and gently shake off any excess sugar to create a perfect sugary finish.
Notes
- Using parchment paper on baking sheets helps prevent sticking and simplifies cleanup.
- Allow cookies to cool completely before the final sugar coating to ensure the sugar adheres properly without melting.
- The panko breadcrumbs add a unique crunchy texture that differentiates these cookies from traditional ones.
- Cookies can be stored in an airtight container at room temperature for up to 5 days.
