Description
A fresh and flavorful cilantro lime rice recipe that’s quick and easy to prepare. This zesty side dish combines aromatic basmati rice with vibrant lime juice, zest, and fresh cilantro, making it a perfect complement to tacos, burritos, grilled meats, or Mexican and Asian-inspired meals.
Ingredients
Rice and Cooking Base
- 2 tablespoons extra virgin olive oil
- 1 1/2 cups basmati rice, or other long-grain white rice
- 1 clove garlic, minced
- 2 1/4 cups water
- 1 teaspoon salt
Flavorings
- Finely grated zest of one lime
- 3 tablespoons lime juice
- 1 cup lightly packed chopped cilantro (leaves and tender stems only)
Instructions
- Brown the rice: Heat the olive oil in a medium saucepan over medium-high heat. Add the raw basmati rice and stir to coat all grains with the olive oil. Cook, stirring occasionally, until the rice starts to brown slightly and develop a nutty aroma.
- Add garlic and cook briefly: Stir in the minced garlic and cook for about one minute until fragrant but not burned.
- Add liquids and seasonings, then simmer: Pour in the water, add salt and lime zest, and bring the mixture to a rolling boil. Once boiling, cover the saucepan with a tight-fitting lid and reduce the heat to low to maintain a very gentle simmer.
- Cook rice undisturbed: Let the rice cook without lifting the lid for 15 minutes, or according to your rice package instructions, until the water is fully absorbed and rice is tender.
- Let rice rest: Remove the saucepan from heat and keep it covered, letting the rice sit for an additional 10 minutes to steam and settle.
- Fluff the rice: After resting, use a fork to gently fluff the rice, separating the grains.
- Mix in lime juice and cilantro: Transfer the rice to a serving bowl. Pour the fresh lime juice over it and fold in the chopped cilantro until evenly distributed.
- Serve: Enjoy this flavorful cilantro lime rice alongside chicken, steak, shrimp, or your favorite Mexican or Asian dishes.
Notes
- For best results, use basmati or another long-grain white rice to achieve a fluffy texture.
- Do not lift the lid during cooking to ensure proper steaming of the rice.
- Adjust lime juice amount based on your preferred tartness.
- Can be made ahead and refrigerated; reheat gently with a sprinkle of water to retain moisture.
- This recipe pairs well with a variety of dishes including tacos, burritos, grilled meats, and stir-fries.
