Description

This Cilantro Lime Chicken Breast recipe offers a zesty, fresh flavor perfect for a quick and healthy meal. Marinated in lime juice, zest, garlic, and cilantro, the chicken breasts become tender and infused with vibrant citrus and herb notes. You can cook this dish either on a grill or in an air fryer, making it versatile and convenient. The marinade enhances the natural juiciness of the chicken while the simple seasoning keeps it light and delicious, ideal for a nutritious weeknight dinner or a tasty addition to salads and rice bowls.

Ingredients

Chicken

  • 4 organic boneless skinless chicken breasts (6 oz each)

Marinade

  • Zest and juice of 1 lime (plus 1 lime cut into wedges for garnish)
  • 1 tbsp olive oil
  • 1/2 cup fresh cilantro (divided: 1/4 cup finely chopped and 1/4 cup for garnish)
  • 2 cloves minced garlic
  • 1 tsp kosher salt
  • Black pepper, to taste

Instructions

  1. Prepare Chicken: Pound the thicker end of each chicken breast with a mallet to even out the thickness so they cook uniformly.
  2. Make Marinade: In a large glass or ceramic container with a lid or a gallon-size freezer bag, combine lime juice, lime zest, olive oil, finely chopped 1/4 cup cilantro, minced garlic, kosher salt, and black pepper.
  3. Marinate: Add the chicken breasts to the marinade and coat them thoroughly on both sides. Cover and refrigerate for at least 1 hour, preferably overnight, turning the chicken halfway through to ensure even flavor absorption.
  4. Grill Preparation: When ready to cook, preheat and oil a grill or grill pan to medium to medium-high heat.
  5. Grill Chicken: Grill the chicken breasts for about 5 minutes on each side until they are charred on the outside and cooked through in the center (internal temperature should reach 165°F).
  6. Serve: Remove chicken from the grill, place on a platter, and squeeze the remaining lime wedge over the chicken. Garnish with the remaining fresh cilantro.
  7. Alternative Air Fryer Method: Arrange chicken breasts in a single layer in the air fryer basket and cook at 380°F for 5 minutes on each side until cooked through and slightly crispy.

Notes

  • Marinate overnight for maximum flavor and tenderness.
  • Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F for safety.
  • Adjust seasoning to taste, adding more salt or pepper if desired.
  • Serve with lime wedges and additional fresh cilantro for a bright finish.
  • This chicken pairs well with rice, salads, or roasted vegetables.
