Ingredients
Cookie Dough
- 2 cups almond flour

Frosting
- 1 cup simple mills frosting
- 2 tbsp brown sugar
- ½ tsp cinnamon
Topping Crumble
- 1 tbsp brown sugar
- ⅓ tsp cinnamon
Instructions
- Preheat and mix dough: Preheat your oven to 350ºF. In a medium bowl, combine the almond flour, ¼ cup brown sugar, baking powder, 1 tsp cinnamon, and unsweetened applesauce. Mix well; be patient as the applesauce takes a bit of effort to fully incorporate into the almond flour, but it will come together smoothly.
- Form cookies: Using a cookie scoop, portion out one-inch sized balls of dough. Place them on a baking sheet. Using a ¼ teaspoon, gently press the center of each ball down slightly to create a small indentation. This helps the cookies hold the frosting better once baked.
- Bake and cool: Bake the cookies for about 11 minutes at 350ºF. Once done, remove from the oven and allow them to cool completely before adding frosting to ensure the icing doesn’t melt or slide off.
- Prepare frosting and crumble: While the cookies cool, mix the frosting ingredients together by combining simple mills frosting with 2 tablespoons of brown sugar and ½ teaspoon cinnamon. This gives the frosting its churro-inspired flavor and color. In a separate small bowl, combine the remaining brown sugar and cinnamon to create the crumble topping that will add texture and additional sweetness.
- Assemble cookies: Fill a piping bag with the cinnamon sugar frosting and pipe a small dollop on the center of each cooled cookie.
