Description

These Chocolate Zucchini Brownies offer a moist and rich twist on classic brownies by incorporating finely shredded zucchini, adding moisture and subtle freshness. Topped with a luscious dark chocolate frosting, they make a delightful treat that balances indulgence with a hint of vegetable goodness, perfect for any occasion.

Ingredients

Brownies

  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup dark chocolate unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon kosher salt
  • 2 1/2 cups finely shredded zucchini

Frosting

  • 1/4 cup unsalted butter, melted
  • 5 tablespoons dark chocolate unsweetened cocoa powder
  • 2 cups powdered sugar
  • 6 tablespoons heavy whipping cream
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line a 13×9-inch baking dish with parchment paper to prevent sticking and make removal easier after baking.
  2. Mix Brownie Batter: In a large mixing bowl, whisk together the vegetable oil, granulated sugar, light brown sugar, and vanilla extract until combined. Add the all-purpose flour, 1/2 cup cocoa powder, baking soda, and kosher salt. Stir everything together until well blended. The batter will be very dry at this point, which is normal.
  3. Incorporate Zucchini: Fold in the finely shredded zucchini carefully. Depending on the moisture content of your zucchini, the batter might still feel slightly dry. Allow the batter to rest for 10 minutes to let the zucchini release moisture and hydrate the mixture.
  4. Bake the Brownies: Pour the batter evenly into the prepared baking dish. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs. Remove from oven and let the brownies cool completely in the pan before frosting.
  5. Prepare Frosting: In a small bowl, whisk together the melted butter and 5 tablespoons of cocoa powder until smooth. Add the powdered sugar, heavy whipping cream, and vanilla extract, and whisk until you achieve a creamy, spreadable consistency.
  6. Frost and Serve: Spread the chocolate frosting evenly over the cooled brownies. Once frosted, cut into bars and serve. Enjoy the rich, moist brownies enhanced with the subtle freshness of zucchini!

Notes

  • Make sure to finely shred the zucchini and squeeze out any excess moisture if your zucchini is very watery to prevent soggy brownies.
  • Resting the batter before baking helps hydrate the flour and the shredded zucchini, improving texture.
  • Use parchment paper lining to easily lift the brownies out for clean cutting.
  • Brownies can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
  • Customize frosting sweetness by adjusting powdered sugar amounts.
