Instructions
- Melt the butter: Melt the butter in the microwave for about 1 minute until mostly melted but still with some unmelted pieces, then cool it in the fridge for about 20 minutes.
- Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt until thoroughly combined. Set aside.
- Combine wet ingredients: In a large bowl, whisk the cooled melted butter with the light brown and granulated sugars until well blended. Add in the egg, egg yolk, and vanilla extract, then whisk until smooth.
- Add cocoa powder: Whisk the Dutch process cocoa powder into the wet mixture until fully incorporated and silky.
- Combine wet and dry: Stir the dry ingredient mixture into the wet ingredients gently until just combined to avoid overmixing. Cover the dough and chill in the refrigerator while preheating oven (can chill overnight for enhanced flavor).
- Preheat oven and prepare sheets: Preheat your oven to 350°F (177°C) for 20-30 minutes to stabilize temperature. Line large baking sheets with parchment paper.
