Description

These Chocolate Strawberry Yogurt Clusters are a delightful frozen treat combining the tartness of strawberries and raspberries with creamy Greek yogurt, sweetened with honey and flavored with vanilla and cinnamon. Coated in smooth melted chocolate, they make a perfect healthy snack or dessert that you can enjoy straight from the freezer.

Ingredients

Yogurt Mixture

  • 1½ cups chopped strawberries and/or raspberries
  • 1 cup plain low fat Greek yogurt (224g)
  • 1 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • Dash of cinnamon
  • Optional: ½ scoop vanilla protein powder

Chocolate Coating

  • 1¼ cup chocolate chips (220g)
  • 1 tbsp coconut oil

Instructions

  1. Mix Yogurt Base: In a large mixing bowl, combine the Greek yogurt, honey, vanilla extract, cinnamon, and optional protein powder. Stir thoroughly until the mixture is smooth and well blended. Gently fold in the chopped strawberries and raspberries to evenly distribute the fruit without breaking it up too much.
  2. Form Clusters and Freeze: Line a baking sheet with parchment paper. Using a large spoon, scoop and place about 10 portions of the yogurt mixture onto the parchment, shaping them into clusters. Place the tray in the freezer and allow the clusters to freeze solid for approximately 1 hour.
  3. Melt Chocolate Coating: In a small microwave-safe bowl, combine the chocolate chips and coconut oil. Heat in the microwave in 30-second intervals, stirring after each, until fully melted and smooth. Add more coconut oil as needed to thin the chocolate for easier dipping. Allow the chocolate to cool slightly but remain liquid.
  4. Dip Clusters in Chocolate: Remove the frozen yogurt clusters from the freezer. Carefully dip each cluster into the melted chocolate, ensuring they are well-coated. Place the dipped clusters back onto the parchment-lined baking sheet.
  5. Set Chocolate Coating: Return the baking sheet with the dipped clusters to the freezer for another 10 to 20 minutes until the chocolate hardens and is set firmly.
  6. Storage and Serving: Serve the clusters immediately as a cold, refreshing treat or store them in an airtight container in the freezer. For the best texture, allow the clusters to sit at room temperature for about 15 minutes before enjoying.

Notes

  • You can substitute the berries with any berry mix or freeze-dried fruit for variation.
  • Use dark chocolate chips for a richer, less sweet flavor.
  • The optional protein powder adds extra nutrition but can be omitted if preferred.
  • Be careful not to overheat chocolate to avoid burning it.
  • These clusters are best kept frozen and consumed within 1 week for optimal freshness.
  • Allow clusters to soften slightly at room temperature before eating for the best texture.
