Instructions
- Melt Butter: Melt 1/2 cup (8 Tbsp; 113g) unsalted butter in a large bowl and set aside to cool slightly while preparing the rest of the batter.
- Beat Eggs and Sugar: Using a handheld or stand mixer fitted with a whisk attachment, beat the eggs and granulated sugar on high speed for 8–10 minutes until the mixture is thick, pale, and forms ribbons when the beaters are lifted. Beat in the vanilla and peppermint extracts just until combined.
- Sift Dry Ingredients: Sift together the all-purpose flour, Dutch-processed cocoa powder, baking powder, salt, and espresso powder (if using) directly into the bowl with the egg mixture. Gently fold with a silicone spatula until just combined.
- Add Melted Butter: Pour the slightly cooled melted butter into the batter and gently fold until fully incorporated, creating a glossy batter.
- Refrigerate Batter: Cover the batter and refrigerate for at least 45 minutes and up to 2 hours to allow it to rest. Avoid longer refrigeration to prevent the butter from firming too much, which would make the madeleines dense.
