Ingredients
Brownie Layer
- 1 ½ cups (187.5 g) all-purpose flour
- 1 tablespoon cornstarch
- ⅓ cup (39 g) Dutch-processed cocoa powder
- ½ teaspoon baking powder
- ¼ teaspoon kosher salt
- 4 large eggs, room temperature
- 2 cups (400 g) granulated sugar
- ¾ cup (1 ½ sticks / 170 g) unsalted butter
- 2 teaspoons vanilla extract
Mousse
- 1 ½ cups (357 g) heavy whipping cream, cold, divided
- 1 cup semi-sweet chocolate chips (or your preference)
- Chocolate curls, for garnish (optional)
Instructions
- Preheat and Prepare Baking Dish: Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper, leaving some overhang on the sides to easily lift the baked brownies out later.
- Combine Dry Ingredients: In a large bowl, whisk together all-purpose flour, cornstarch, Dutch-processed cocoa powder, baking powder, and kosher salt. Set this mixture aside.
- Mix Eggs, Sugar, Butter and Vanilla: In the bowl of a stand mixer fitted with the paddle attachment, add the room temperature eggs, granulated sugar, melted unsalted butter, and vanilla extract. Beat on medium speed until the mixture becomes light, fluffy, and well combined.
- Incorporate Dry Mixture: With the mixer on low speed, gradually add the dry ingredients to the wet ingredients, mixing just until fully combined and a smooth batter forms.
- Bake Brownie Layer: Pour the brownie batter evenly into the prepared baking dish. Bake in preheated oven for 30 to 35 minutes or until the edges are set and look firm but the center remains shiny and slightly moist for a fudgy texture.
- Cool Brownies: Remove from oven and allow the brownies to cool completely at room temperature in the baking dish.
- Heat Cream for Mousse: In a microwave-safe bowl, heat ½ cup of the heavy whipping cream for about 50 seconds or until warm (adjust time based on your microwave). Be careful not to overheat.
- Melt Chocolate: Add the semi-sweet chocolate chips to the warm cream and stir continuously until all the chocolate has melted and the mixture is smooth. Set aside and allow this to cool slightly.
- Whip Remaining Cream: Pour the remaining 1 cup of heavy whipping cream into a clean bowl. Using a hand mixer or stand mixer, whip the cream until stiff peaks form.
- Fold Chocolate Mixture into Whipped Cream: Gently fold the cooled chocolate cream into the stiffly whipped cream, mixing just until fully combined to create a light mousse.
- Assemble Final Dessert: Spread the chocolate mousse evenly over the cooled brownie base in the baking dish.
- Garnish and Chill: Optionally decorate the mousse with chocolate curls. Refrigerate the assembled brownies for at least 2 hours, preferably overnight, to allow the mousse to set and flavors to meld before serving.
Notes
- Room temperature eggs help achieve a smoother batter and better rise.
- Using Dutch-processed cocoa powder intensifies the chocolate flavor and yields a richer color.
- The mousse topping can be flavored with a teaspoon of espresso powder or liqueur for added depth.
- Chocolate curls are optional but add a beautiful decorative touch.
- Store leftovers covered in the refrigerator for up to 3 days.
- For easier slicing, use the parchment paper overhang to lift the brownies out before cutting.
