Ingredients

Macaron Shells

  • 95 grams confectioners’ sugar
  • 10 grams Hershey’s unsweetened cocoa powder
  • 100 grams egg whites (approximately 3 large eggs)
  • 100 grams granulated sugar
  • 1 teaspoon vanilla bean paste
  • 1 to 2 drops brown gel paste food color

Chocolate Ganache Filling

  • 6 tablespoons heavy cream
  • 4 oz semi-sweet chocolate
  • ½ tablespoon butter
  • 1 teaspoon rum (optional)


Instructions

  1. Prepare Setup: Fill a small saucepan with about 1 inch (2.5 cm) of water and bring to a simmer over medium-low heat. Line two 13 x 18-inch (33 x 46-cm) baking sheets with parchment paper or Silpat mats. Fit a ½-inch (13-mm) tip onto a pastry bag and place it in a wide glass with the tip at the bottom but facing up. Fold the bag over the glass rim to form a cuff to prevent batter spillage.
  2. Mix Dry Ingredients: Sift together almond flour, confectioners’ sugar, and cocoa powder through a fine sieve into a large bowl. If almond flour is coarse, pulse the mixture in a food processor 10-15 times until finely blended.
  3. Heat Egg Whites and Sugar: Combine egg whites and granulated sugar in the bowl of a stand mixer and whisk briefly to combine. Place this bowl over the simmering water, ensuring it doesn’t touch the water. Whisk continuously for about 2 minutes until the mixture is warm and sugar dissolves completely (check by rubbing mix between fingers to confirm no granules).
  4. Whip Meringue: Remove bowl from heat and attach it to the stand mixer with a whisk attachment. Begin mixing at medium-low speed (speed 4) for 2 minutes, then increase to medium-high (speed 8) and continue until glossy stiff peaks form, about 6 minutes.
  5. Combine Batter (Macaronage): Fold dry ingredients into the meringue along with vanilla bean paste and brown gel food coloring using a rubber spatula. Continue folding firmly by smearing batter against the bowl sides until the batter becomes glossy with a lava-like consistency. The batter should flow slowly in figure 8s and blend back within 10-15 seconds. Avoid overmixing to prevent puddles.
  6. Pipe Macaron Shells: Transfer batter to the prepared pastry bag. Pipe 1¼-inch (3-cm) diameter mounds upright and about ½ inch (13 mm) above the parchment. Finish each mound by releasing pressure and flicking the wrist to avoid points. Tap trays on the counter to release air bubbles and pop any remaining bubbles with a toothpick. Let shells rest for 20 minutes or until surfaces dry slightly.
  7. Preheat Oven: Set oven to 325°F (165°C) and position rack in the center.
  8. Bake Shells: Bake one tray at a time for 12 to 14 minutes until tops are shiny and crisp. Cool shells completely on wire racks.
  9. Store Shells: Shells can be made up to a day ahead and stored in a covered container in the refrigerator or frozen in a sealed container for up to two weeks. Thaw refrigerated before assembling.
  10. Make Ganache Filling: Heat heavy cream in a microwave-safe bowl until boiling, about 1 minute. Add chopped semi-sweet chocolate and butter, let sit for 1 minute, then whisk smooth. Alternatively, pour hot cream over chocolate and butter in a bowl. Stir in rum if using. Cool ganache while occasionally whisking until spreadable but not too firm.
  11. Assemble Macarons: Remove shells from parchment and turn half upside down. Spoon about one teaspoon of ganache onto each bottom shell and top with a second shell, pressing gently to spread filling evenly. Repeat for all macarons. Serve same day or refrigerate covered for up to 2 days; bring to room temperature before serving.
