  • 1.5 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon espresso powder
  • Pinch of kosher salt
  • 4 large pasteurized eggs, at room temperature

Instructions

  2. Melt the chocolate: In a small microwave-safe bowl, gently melt the bittersweet and semi-sweet chocolates together in the microwave. Heat in short bursts, stirring in between, to prevent scorching. Set aside and allow the chocolate mixture to come to room temperature.
  3. Cream butter and sugar: Using a stand mixer fitted with the paddle attachment, beat the softened butter and powdered sugar on medium-high speed until light and fluffy, about 1 to 2 minutes.
