Ingredients
Marshmallows
- 2 cups freeze dried strawberries, crushed (plus extra for sprinkling)
- ½ cup powdered sugar (for sprinkling and mixing)
- 2 (.25 oz) packets gelatin
- 8 tablespoons cold water (divided)
- 1 ½ cups granulated sugar
- 2 teaspoons vanilla extract
- ¼ teaspoon salt
Chocolate Coating
- 6 ounces high-quality dark chocolate, melted
- 1 tablespoon coconut oil
Instructions
- Crush the Strawberries: Crush the freeze-dried strawberries into a fine powder using a food processor or by placing them in a ziplock bag and crushing with a rolling pin. Reserve ¼ to ⅓ cup of the strawberry powder for the marshmallows.
- Mix Strawberry Powder with Powdered Sugar: Stir the remaining strawberry powder into the powdered sugar until well combined.
- Prepare Pan: Spray an 8×8-inch pan with nonstick spray, then sprinkle the strawberry powdered sugar mixture evenly over the entire pan, shaking to cover the surface completely.
- Make Sugar Syrup with Gelatin: In a small saucepan, mix remaining cold water and granulated sugar. Heat over medium heat while stirring until sugar dissolves and the mixture becomes bubbly (about 3 to 4 minutes). Stir in the gelatin mixture (gelatin soaked in 8 tablespoons cold water) and whisk to combine. Bring to a boil briefly, then immediately remove from heat. Pour this hot mixture into the bowl of an electric mixer fitted with a whisk attachment and let it cool slightly.
- Add Flavor and Whip: Add vanilla extract and salt to the mixture. Beat on medium-high speed for 10 to 15 minutes until the mixture is thick, glossy, white, and shiny.
- Divide and Flavor Marshmallow Mixture: Remove half of the marshmallow mixture and spread it evenly into the prepared pan. To the remaining foam in the mixer, add the reserved strawberry powder and beat for another 1 to 2 minutes to combine.
- Create Swirl Layer: Spread the strawberry marshmallow mixture on top of the plain marshmallow layer in the pan. Use a knife to gently swirl the two layers together without fully mixing, then smooth the top.
- Let Set: Sprinkle with additional strawberry powdered sugar and allow the marshmallows to set at room temperature for about 4 hours or overnight.
- Prepare Chocolate: Stir the coconut oil into the melted dark chocolate until smooth, or melt them together in the microwave.
- Slice and Coat: Once the marshmallows are fully set, cut them into squares of your preferred size. Either drizzle the melted chocolate over the marshmallows or dip them into the chocolate. Finish by sprinkling with crushed freeze-dried strawberries.
- Storage: Store the marshmallows in a sealed container at room temperature on the counter to maintain freshness.
