Ingredients

Strawberries

  • 2 lbs. fresh strawberries

Cheesecake Filling

  • 8 oz cream cheese, softened
  • 1 tbsp sour cream
  • 3/4 cup powdered sugar (adjust to taste)
  • 1 tsp vanilla extract

Coating and Toppings

  • 1 cup chocolate chips
  • 1/4 cup graham crackers, crushed

Instructions

  1. Prepare Strawberries: Wash the strawberries thoroughly and pat them dry with a paper towel. Using a melon baller, remove the stems and create a small hollow in each strawberry to hold the cheesecake filling. Set them aside.
  2. Make the Cheesecake Filling: In a medium bowl, beat the softened cream cheese and sour cream until fluffy. Add the vanilla extract and powdered sugar, then beat again until smooth and well combined. Transfer the cheesecake mixture into a piping bag or a zip-close plastic bag with a small corner snipped off.
  3. Fill the Strawberries: Pipe a small amount of the cheesecake filling into the hollow of each strawberry. Arrange the filled strawberries on a baking sheet lined with wax paper. Chill them in the refrigerator while you prepare the chocolate coating.
  4. Melt the Chocolate: Place the chocolate chips in a heatproof metal or glass bowl that can sit atop a pot. Fill a small pot with about an inch of water and bring it to a boil. Set the bowl of chocolate on top of the pot (double boiler method) and stir gently with a rubber spatula until the chocolate is completely melted and smooth. Turn off the stove but keep the bowl over the pot to maintain warmth.
