Ingredients

Florentine Base

  • 2/3 cup (130g) sugar
  • 1/4 cup (70g) honey
  • 1/4 cup (70g) heavy cream
  • 2.5 ounces (70g) candied orange or mandarin, chopped
  • 5.3 ounces (150g) sliced almonds

Chocolate Coating

  • 4.2 ounces (120g) milk chocolate


Instructions

  1. Prepare caramel mixture: Heat honey, cream, and sugar in a small saucepan over medium heat until the temperature reaches 245°F (118°C). If you do not have a thermometer, simmer the mixture gently for about 5 minutes, ensuring it does not brown.
  2. Add nuts and fruit: Remove the saucepan from heat and gently stir in the chopped candied orange or mandarin along with the sliced almonds, making sure they are well coated in the caramel mixture.
  3. Preheat oven: Set your oven to 340°F (170°C) to prepare for baking the florentines.
  4. Form cookies: Spoon teaspoons of the batter onto a baking sheet lined with parchment paper. Alternatively, use silicone muffin cups to help maintain their shape during baking.
  5. Bake florentines: Place the baking sheet in the oven and bake the florentines for 5 to 10 minutes or until they turn golden brown. Remove from the oven and let them cool before carefully inverting each cookie.
  6. Melt chocolate: While the florentines cool, melt the milk chocolate in the microwave by heating in 20-second intervals, stirring in between until smooth and fully melted.
  7. Dip in chocolate: Dip the bottom of each cooled florentine into the melted chocolate, or spoon the chocolate over the bottom side for coating. Invert again and allow the chocolate to set completely.
