Description

Ingredients

Filling

  • 8 oz Brick style cream cheese, softened
  • 2 Cups powdered sugar
  • 2 Cups chocolate chips (dark, semi-sweet, milk or a mix)

Coating

  • 1 Cup chocolate candy melts (dark, milk, or white)
  • Sprinkles (optional)


Instructions

  1. Beat the cream cheese and sugar: Begin by beating the softened cream cheese in a large bowl until smooth. Slowly add the powdered sugar while continuing to beat until the mixture becomes light and fluffy.
  2. Melt and add chocolate chips: Melt the chocolate chips in a double boiler over the stove or in short bursts in the microwave, stirring until smooth. Add the melted chocolate to the cream cheese mixture and mix thoroughly until combined and smooth.
  3. Optionally add flavor extracts: If desired, incorporate a teaspoon or two of your favorite extracts into the mixture for different flavors. You can also divide the batter to create multiple flavor variations.
  4. Chill the filling: Place the bowl in the refrigerator for 20 to 30 minutes to allow the filling to firm up, making it easier to roll into balls.
  5. Form truffle balls: Remove the filling from the fridge and roll into balls between 1/2 to 1 inch in diameter. Use a melon baller for uniform size if you like. Place the formed balls onto a baking sheet lined with a silicone mat.
  6. Melt chocolate candy melts: Melt the chocolate candy melts in the microwave or using a double boiler until smooth and ready for dipping.
  7. Dip truffles in chocolate shell: Use a fork or chocolate dipping tool to submerge each truffle ball into the melted chocolate coating. Place the dipped truffles back onto the silicone-lined baking sheet. Add sprinkles at this stage if desired, before the chocolate hardens.
