Description

Chocolate Covered Strawberry Bark is a delightful treat combining buttery caramel-coated Ritz crackers with melted semi-sweet and white chocolate, topped with fresh strawberries for a perfect balance of sweet, salty, and fruity flavors. This easy-to-make dessert is perfect for sharing and is sure to impress with its marbled chocolate look and crunchy texture.

Ingredients

Fresh Ingredients

  • 2 cups fresh strawberries, tops removed

Baking Base

  • 1 1/2 sleeves Ritz crackers (48 crackers)

Caramel Sauce

  • 1 cup (2 sticks) salted butter (can use unsalted if preferred)
  • 1 cup packed light brown sugar

Chocolate Toppings

  • 12 ounce package semi sweet chocolate chips
  • 6 ounces (½ a package) white chocolate chips

Instructions

  1. Preheat the Oven: Set your oven to 400°F (204°C) and line a cookie sheet with nonstick aluminum foil or spray the foil with nonstick spray to prevent sticking.
  2. Prepare Strawberries: Remove tops from 2 cups of fresh strawberries and dice them into small pieces. Place the pieces on a paper towel to dry and remove excess moisture for better texture later.
  3. Arrange Crackers: Lay out 1 1/2 sleeves (48) Ritz crackers in a single layer across the prepared cookie sheet, making sure they are evenly spaced and cover the surface.
  4. Melt Caramel Mixture: In a medium saucepan over medium-low heat, combine 1 cup (2 sticks) salted butter and 1 cup packed light brown sugar. Stir continuously until fully melted and smooth, about 3 minutes.
  5. Coat Crackers with Caramel: Pour the warm caramel mixture evenly over the crackers on the cookie sheet, being careful not to move them. Bake in the oven for about 7 minutes until the caramel is bubbly and infused into the crackers.
  6. Add Semi-Sweet Chocolate: Remove the cookie sheet from the oven and immediately sprinkle 12 ounces of semi-sweet chocolate chips evenly over the hot caramel. Spread the chocolate with an offset spatula or knife as it melts to create a smooth layer.
  7. Swirl White Chocolate: Sprinkle 6 ounces of white chocolate chips on top of the semi-sweet chocolate. If the chocolate isn’t melting, return the pan to the oven for about a minute. Use a toothpick to swirl white chocolate through the melted semi-sweet chocolate creating a marbled effect.
  8. Top with Strawberries: Dry the diced strawberries again with a paper towel to remove moisture. Sprinkle them evenly over the warm chocolate so they slightly sink into the chocolate layers.
  9. Refrigerate to Set: Place the cookie sheet in the refrigerator until the bark is completely set and firm, usually about 30 minutes to 1 hour.
  10. Break and Serve: Once set, remove the bark from the refrigerator, peel off the aluminum foil, and break it into smaller, bite-sized chunks. Enjoy your delicious Chocolate Covered Strawberry Bark!

Notes

  • Drying the strawberries well before adding them prevents sogginess and excess moisture in the bark.
  • Using a combination of semi-sweet and white chocolate adds a beautiful visual swirl and enhances the flavor complexity.
  • Be careful not to move the crackers after pouring the caramel to maintain a neat, even layer.
  • Store leftover bark in an airtight container in the refrigerator to maintain freshness and texture.
  • You can substitute the Ritz crackers with other buttery crackers for a different flavor.
