- Add Vanilla and Eggs: Add the vanilla extract and eggs to the butter-sugar mixture and beat for an additional 2 minutes. Scrape the bowl again to mix thoroughly.
- Incorporate Dry Ingredients: Add salt and baking soda to the mixture, beating briefly just until combined. Then, add the all-purpose flour along with the chopped bittersweet and milk chocolate. Mix on low speed until the flour is fully incorporated and the chocolate is evenly distributed throughout the dough.
- Chill the Dough: Cover the bowl with plastic wrap or transfer the dough into an airtight container and refrigerate until firm, typically a few hours. Alternatively, form dough into 1.5-tablespoon balls on the baking sheet and chill for about 30 minutes to speed up the process.
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 350°F (175°C) and position a rack in the middle of the oven. Line a 13 x 18-inch (33 x 46-cm) baking sheet with parchment paper for easy cookie removal.
