Description
Delightfully rich and fudgy Chocolate Chocolate Chip Cookie Bars combine the deep flavor of cacao powder with a double dose of chocolate chips for an irresistible treat. These bars have a tender, chewy texture thanks to the perfect balance of brown sugar and peanut butter, baked to golden perfection, and ideal for satisfying your chocolate cravings in an easy 40-minute bake.
Ingredients
Dry Ingredients
- 2½ cups all purpose flour
- ½ cup cacao powder
- 2 tsp baking powder
- ¼ tsp salt
Wet Ingredients
- 2 large eggs, room temperature
- ¼ cup peanut butter
- 1 cup brown sugar
- ¼ cup granulated sugar
- 1 cup unsalted butter, melted
- 2 tsp vanilla extract
Additional Ingredients
- 2 cups milk chocolate chips (reserve a small handful more for topping the bars)
Instructions
- Prepare the pan: Preheat your oven to 350ºF (175ºC). Line an 8×8 inch baking pan with parchment paper, ensuring the parchment overhangs on all sides for easy removal of the bars later.
- Mix dry ingredients: In a medium bowl, whisk together the all purpose flour, cacao powder, baking powder, and salt until evenly combined.
- Whisk wet ingredients: In a separate bowl, use an electric whisk or stand mixer to beat the eggs for 1-2 minutes until fluffy. Add peanut butter, melted butter, brown sugar, granulated sugar, and vanilla extract, then whisk until the mixture is smooth and fully combined.
- Combine wet and dry: Gradually add the dry ingredients to the wet ingredients and gently fold the mixture together until a soft dough forms. Then fold in the milk chocolate chips thoroughly.
- Press and top: Transfer the dough to the prepared baking pan and use a spatula to evenly press it down. Sprinkle the reserved chocolate chips on top for an extra chocolatey finish.
- Bake: Bake in the preheated oven for 20-25 minutes until the edges are set but the center remains fudgy.
- Cool and slice: Remove from the oven and allow to cool in the pan for 15 minutes. For easier slicing and to prevent chocolate chips from dragging, refrigerate the bars before lifting them out using the parchment overhang. Slice into 16 bars and serve.
Notes
- Use room temperature eggs for better incorporation and fluffiness.
- Peanut butter adds moisture and a subtle nutty flavor but can be substituted with any nut or seed butter if preferred.
- For a dairy-free version, swap out the butter and chocolate chips for vegan alternatives.
- Press the dough evenly into the pan to ensure uniform baking.
- Chilling the bars before slicing helps achieve clean cuts without melting chocolate chips sticking.
- Store leftover bars in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
