Ingredients

Cake Batter

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 3/4 cup baking cocoa
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup canola oil
  • 1 cup brewed coffee
  • 1 cup whole milk
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract

Vanilla Frosting

  • 5 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 to 4 tablespoons sprinkles (optional)

Instructions

  1. Beat together the cake batter: In a large bowl, sift together the all-purpose flour, sugar, baking soda, cocoa powder, salt, and baking powder to ensure even mixing and remove any lumps.
  2. Combine wet ingredients and mix: Add canola oil, brewed coffee, and whole milk to the dry ingredients and mix on medium speed for one minute until combined.
  3. Add eggs and vanilla extract: Incorporate the eggs and vanilla extract into the batter, beating for an additional two minutes until the batter is thin and smooth, ready to pour into pans.
  4. Prepare pans and preheat oven: Preheat your oven to 325°F (163°C). Grease and flour two round baking pans to prevent sticking.
  5. Pour batter and bake: Divide the batter evenly between the prepared pans and bake for 25 to 30 minutes. Check doneness by inserting a toothpick into the center; it should come out clean.
  6. Cool the cakes: Let the cakes cool in their pans for 10 minutes, then carefully remove them from the pans and transfer to wire racks to cool completely.
  7. Start the frosting base: In a small saucepan, whisk together 5 tablespoons of all-purpose flour and 1 cup of whole milk until smooth. Bring to a boil over medium heat, stirring constantly, until the mixture thickens, about 1 to 2 minutes.
  8. Chill the frosting base: Transfer the thickened mixture to a small bowl, cover it, and refrigerate until fully chilled to prepare for mixing with butter and sugar.
  9. Make the vanilla buttercream frosting: In a large bowl, beat together softened butter, shortening, sugar, and vanilla extract for 3 to 4 minutes until creamy and light. Slowly add the chilled flour-milk mixture and continue beating for 10 minutes until the frosting forms stiff peaks and a fluffy texture.
  10. Assemble the cake and decorate: If desired, fold in sprinkles into the frosting. Spread the frosting evenly between the cake layers, then cover the top and sides of the cake for full coverage. Chill if necessary to set the frosting before serving.

Notes

  • Use brewed coffee in the cake batter to enhance the chocolate flavor without adding a coffee taste.
  • Start with slightly cold butter for the frosting to prevent melting and achieve stiff peaks during mixing.
  • The frosting thickens with chilling; don’t skip refrigerating the flour-milk mixture before beating.
  • Greasing and flouring baking pans ensures the cake layers release easily after baking.
  • For a richer chocolate flavor, sift the cocoa powder with the dry ingredients thoroughly.
