Ingredients
Dry Ingredients
- ½ cup unsweetened cocoa powder
- ½ cup old-fashioned rolled oats
- 1 teaspoon baking powder
- ½ cup bittersweet chocolate chips
Wet Ingredients
- 15 ounce can black beans (rinsed and drained)
- 3 eggs
- ½ cup plain Greek yogurt
- ½ cup pure maple syrup or honey
- 2 teaspoons vanilla extract
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit and line a muffin tin with silicone or paper liners to prepare for baking.
- Blend Ingredients: Add all ingredients except for the chocolate chips into a blender. Blend the mixture until it becomes smooth and evenly combined.
- Fill Muffin Tin: Pour the blended batter into the muffin cups, filling each almost to the top. Then drop 4-5 chocolate chips onto each muffin for a delicious chocolate topping.
- Bake Muffins: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Cool and Serve: Allow the muffins to cool for 5 minutes in the pan, then transfer them to a wire rack to cool completely. If you used silicone liners, you can remove the muffins once cooled.
