  • 1 1/2 cups granulated sugar
  • 3/4 cup (94g) cake flour
  • 1/4 cup (25g) Dutch process cocoa powder
  • 1/2 tsp (scant) salt
  • 12 large (420g) egg whites, brought to room temperature
  • 3 Tbsp water
  • 1 1/2 tsp cream of tartar
  • 1 1/2 tsp vanilla extract
  • 2 oz dark chocolate, grated

Chocolate Whipped Cream Topping

  • 2 cups heavy cream
  • 3/4 cup powdered sugar
  • 1/4 cup (25g) Dutch process cocoa powder
  • 1 tsp vanilla extract
  • Raspberries or strawberries for garnish (optional)


Instructions

  1. Prepare the Oven and Pan: Move the oven rack one level from center and preheat the oven to 350°F (175°C). Set aside a non-stick 16-cup angel food cake pan with legs; do not grease the pan.
  2. Process Sugar: Pour granulated sugar into a food processor and blitz until very fine, about 2 minutes. This ensures a light texture in the cake.
  3. Mix Dry Ingredients: Transfer half of the processed sugar (3/4 cup) to a mixing bowl, add cake flour, 1/4 cup Dutch process cocoa powder, and salt. Whisk together and set aside.
  4. Whip Egg Whites: Place egg whites in a large (6-quart) stand mixer bowl with a whisk attachment or use an extra-large mixing bowl with a hand mixer. Add water and cream of tartar.
  5. Beat Egg Whites: Mix on medium-low speed until frothy. Slowly add the remaining sugar (3/4 cup), about 1 tablespoon at a time, gradually increasing speed.
  6. Beat to Stiff Peaks: Continue beating on high speed until soft peaks form, then add vanilla extract and beat until stiff peaks form. This can take over 4 minutes with a stand mixer or more with a hand mixer.
  7. Fold Dry Ingredients: Sift about 1/4 cup of the flour mixture over the egg whites at a time and gently fold after each addition just until blended to maintain airiness.
  8. Incorporate Chocolate: Fold in the grated dark chocolate gently until evenly distributed.
  9. Transfer Batter to Pan: Pour or spoon the batter gently into the angel food cake pan, spreading it into an even layer.
  10. Bake: Place in the preheated oven and bake for 35 to 40 minutes until a skewer inserted comes out with a few moist crumbs but no raw batter.
  11. Cool Upside Down: Immediately invert the angel food cake pan onto its legs and let the cake cool for 1 hour. This prevents collapse and maintains volume.
  12. Unmold Cake: After cooling, run a thin, narrow knife around the edges of the pan to detach the cake and remove it carefully.
  13. Prepare Whipped Cream: In a medium bowl, use an electric hand mixer to whip heavy cream until slightly thickened. Add cocoa powder, powdered sugar, and vanilla extract, and whip until stiff peaks form.
  14. Decorate: Pipe or spread the chocolate whipped cream over the cooled cake. Garnish with fresh raspberries or strawberries if desired.
