Description

Delicious and easy-to-make Chocolate Almond Clusters featuring roasted almonds coated in smooth melted semi-sweet chocolate, perfect as a sweet snack or treat. These clusters combine crunchy almonds with rich chocolate, enhanced with a sprinkle of flaky sea salt to balance the sweetness.

Ingredients

Chocolate Almond Clusters Ingredients

  • 12 ounces semi-sweet chocolate, roughly chopped
  • 1 pound roasted almonds (salted or unsalted)
  • Flaky sea salt, for sprinkling (optional)

Instructions

  1. Prepare Baking Sheet: Line a large baking sheet with parchment paper and set aside to prevent the chocolate clusters from sticking during setting.
  2. Melt Chocolate: Place the roughly chopped semi-sweet chocolate in a large heatproof glass bowl. Melt the chocolate in the microwave on low power in 15-second increments, stirring after each to ensure even melting and smooth texture. Alternatively, use a double boiler to gently melt the chocolate without burning.
  3. Combine Almonds and Chocolate: Whisk the melted chocolate until smooth. Add the roasted almonds to the chocolate and use a spatula to stir thoroughly, making sure each almond is well coated in the melted chocolate.
  4. Form Clusters: Using a spoon, scoop clusters of the chocolate-coated almonds onto the prepared baking sheet. Adjust cluster size according to preference; approximately 2 tablespoons per cluster is recommended for ideal portioning.
  5. Add Sea Salt: Sprinkle flaky sea salt over the chocolate clusters while the chocolate is still wet, if using, to enhance the flavor contrast.
  6. Set the Clusters: Allow the clusters to set completely at room temperature. To speed up the process, place the baking sheet in the refrigerator until the chocolate hardens and the clusters are firm.

Notes

  • Use good quality semi-sweet chocolate for best results and flavor.
  • Roasted almonds can be salted or unsalted, depending on your taste preference.
  • Flaky sea salt is optional but highly recommended to add a nice contrast to the sweetness of the chocolate.
  • Clusters can be stored in an airtight container at room temperature or in the fridge for a firmer texture.
  • If melting chocolate on the stovetop, use a double boiler to avoid overheating and burning the chocolate.
