Instructions
- Prepare the Chocolate Cake: Preheat your oven to 350°F (175°C). Lightly grease a 10×15-inch rimmed baking sheet and line it with parchment paper to prevent sticking.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, cocoa powder, espresso powder, and baking powder until well combined.
- Whip Eggs: Using an electric stand mixer fitted with a whisk attachment, beat the eggs on medium-high speed for 3 minutes until frothy and pale.
- Add Sugar and Flavorings: Gradually add the sugar while continuing to beat until the mixture triples in volume and becomes fluffy, about 4-5 minutes. The batter should fall in thick, billowy ribbons when you lift the whisk. Mix in vanilla extract, salt, and oil.
