A quick and flavorful Chicken Zucchini Stir Fry featuring tender thinly sliced chicken breast and crisp zucchini cooked in a savory soy-ginger sauce, perfect for a healthy weeknight meal.
Ingredients
Sauce
- 1/4 cup low sodium soy sauce or gluten-free soy sauce
- 1 cup chicken broth
- 1 tablespoon cornstarch
- 2 tablespoons mirin
- 1 tablespoon sugar
- 2 teaspoons sesame oil
Main
- 1 tablespoon canola oil, divided
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 pound chicken breast, sliced very thinly
- 2 cups zucchini, cut 1/4 inch thick half moons (from 1 large zucchini)
Garnish
- Sesame seeds (optional)
- Scallions (optional)
Instructions
- Prepare the sauce: In a large bowl, whisk together soy sauce, chicken broth, cornstarch, mirin, sugar, and sesame oil until the cornstarch is fully dissolved and the mixture is smooth.
- Cook first half of chicken: Heat 1 teaspoon of canola oil in a large skillet over medium-high heat. Add half of the thinly sliced chicken breast and cook for about 2-3 minutes on each side until just cooked through. Remove and set aside on a plate.
- Cook second half of chicken: Add another teaspoon of canola oil to the skillet and repeat the cooking process with the remaining chicken slices. Remove and set aside with the first batch.
- Sauté aromatics: Using the remaining 1 teaspoon of oil, add the minced garlic and minced ginger to the skillet and cook for 30-45 seconds until fragrant but not browned, stirring constantly to prevent burning.
- Make the sauce and cook zucchini: Stir the garlic and ginger well, then pour in the prepared sauce mixture, whisking to combine. Cook the sauce for 1 minute, then add the sliced zucchini and cook for an additional 2 minutes until the sauce is thickened and the zucchini is tender-crisp.
- Combine and garnish: Remove the skillet from heat, add the cooked chicken back in, and toss gently to coat everything evenly with the sauce. Garnish with sesame seeds and scallions if desired before serving.
Notes
- For gluten-free option, use gluten-free soy sauce.
- Mirin can be substituted with a mixture of rice vinegar and sugar if unavailable.
- Ensure the chicken is sliced very thinly for quick cooking and tender texture.
